Vegan Chocolate Chip Cookies

On wednesday I baked these super good vegan chocolate chip cookies with this recipe i found through Rachel Mansfield’s Instagram -feed. If you like gluten free, dairy free and vegan recipes for some super delicious desserts or treats, be sure to follow!

Vegan, gluten free, dairy free // vegaaninen, gluteeniton, maidoton

INGREDIENTS:

Dry ingredients:

  • 3dl almond flour // 3 dl mantelijauhoja
  • 3 tbs coconut flour // 3 rkl kookosjauhoja
  • 3/4 tsp baking powder // 3/4 tl leivinjauhetta

Wet ingredients:

  • 1 dl creamy almond butter // 1 dl mantelivoita
  • 2 tbs coconut oil // 2 rkl kookosöljyä
  • 3 tbs maple syrup // 3 rkl vaahterasiirappia
  • 1/2 tsp vanilla // 1/2 tl vaniljaa

Mix-in’s:

  • 1 dl dark (raw) chocolate chips // 1 dl tumman (raaka)suklaa paloja

DIRECTIONS:

  1. Preheat the oven to 175 C
  2. In a medium bowl, stir together almond flour, coconut flour and baking powder and set aside
  3. In another medium bowl, mix together almond butter, coconut oil & maple syrup
  4. Add wet ingredients and dry and mix again until well combined
  5. Form into cookies (about 2 tablespoons each) and top with the chocolate chips
  6. Pop in fridge for 10 minutes
  7. Bake in oven for 10-12 minutes or until golden brown. With the 10 minute baking time you’ll get nice and doughy cookies, with 12 minutes they’ll be crispier.

  1. Lämmitä uuni 175 asteiseksi
  2. Sekoita kulhossa jauhot ja leivinjauhe keskenään
  3. Sekoita toisessa kulhossa mantelivoi, kookosöljy , vanilja ja vaahterasiirappi
  4. Kaada märät aineet kuivien sekaan ja sekoita kaikki keskenään tasaiseksi massaksi
  5. Muotoile kekseiksi (n. 2 rkl taikinaa / keksi) ja koristele suklaan paloilla
  6. Laita keksit jääkaappiin 10 minuutiksi
  7. Paista 10-12 minuuttia tai kunnes kullanruskeita. 10 minuutin paistoaikaa jättää keksit mukavan taikinaisiksi, 12 minuuttia tekee kekseistä rapeampia.
