Oven-Baked Oatmeal

Here’s a recipe for something that I made myself as a comfy afterwork dinner today and will eat again as a brekkie tomorrow: oven-baked oatmeal with apples, seeds and nuts. SO GOOD!

Serves for 4, total time 1h // Neljälle, valmistusaika 1h

Gluten free, dairy free // Gluteeniton, maidoton

INGREDIENTS:

Oatmeal

  • 5 dl gluten free oats // 5 dl gluteenittomia kaurahiutaleita
  • 1 dl crushed hazel nuts // 1dl hasselpähkinärouhetta
  • 3/4 dl brown sugar // 3/4dl fariinisokeria
  • 1 tsp cinnamon // 1 tl kanelia
  • 1 tsp cardamom // 1 tl kardemummaa
  • 2 apples cut into small chunks // 2 omenaa pieniksi paloiksi leikattuna
  • 2 eggs // 2 munaa
  • 6 dl oat milk // 6dl kauramaitoa

Topping:

  • 2 dl pumpkin seeds // 2 dl kurpitsansiemeniä
  • 1dl nuts // 1 dl pähkinöitä
  • 3 tbsp maple syrup // 3 rkl vaahterasiirappia
  • 1 tbsp olive oil // 1 rkl oliiviöljyä

DIRECTIONS:

  1. Preheat the oven to 200 C.
  2. Mix the dry ingredients and the apple chunks. Pour into a large baking dish.
  3. Whisk the eggs and oat milk. Pour on top of and mix with the dry ingredients.
  4. Mix the ingredients of the topping together and spread on the oatmeal.
  5. Bake for 30 minutes until oatmeal. Remove the oatmeal from oven and let it cool for 10 minutes.
  6. Serve with for example oat milk, vanilla sauce, ice cream or as such. I tried it with vanilla oat ice cream. Food heaven!

  1. Laita uuni kuumenemaan 200 asteeseen.
  2. Sekoita kuivat aineet ja omenan palat. Kaada seos isoon uunivuokaan.
  3. Sekoita munat ja kauramaito. Kaada ja sekoita hiutaleseokseen.
  4. Valmista kuorrute sekoittamalla aineet keskenään. Levitä puuron päälle uunivuokaan.
  5. Paista puuroa uunissa n.30min. Annan jäähtyä 10 minuuttia.
  6. Tarjoa maidon, vaniljakastikkeen tai jäätelön kanssa. Maistuu myös sellaisenaan. Kokeilin itse puuroa mm. vaniljakaurajäätelön kanssa. Ruokataivas!
