Salmon with Brussels Sprouts, Broccoli and Mushrooms

This week I cooked again one of my all time favorites: salmon with mushrooms (and smetana) and paired it this time brussels sprouts and broccoli.

Serves for 4, total time 45min // Neljälle, valmistusaika 45min

INGREDIENTS:

  • 500g salmon fillet // 500g lohta
  • 200g mushrooms of your liking // 200g sieniä
  • 125g smetana // 125g smetanaa
  • 300g brussels sprouts // 300g ruusukaalia
  • one broccoli // 1 parsakaali
  • olive oil // oliiviöljyä
  • salt and pepper // suolaa ja pippuria

DIRECTIONS:

  1. Preheat the oven to 200 C.
  2. Rinse, slice and cook the mushrooms in a hot skillet with a hint of olive oil until they get a light colour. Season with salt and pepper.
  3.  Place the salmon fillet skin side down in a pan. Mix the mushrooms with smetana and pour over the salmon fillet.
  4. Bake until the salmon is cooked through, about 30 minutes.
  5. While the salmon is in the oven, rinse the greens and cut the broccoli into large florets. Let them cook in boiling water for about 5 minutes.
  6. Serve and enjoy 🙂

  1. Lämmitä uuni 200 asteeseen. 
  2. Huuhtele ja pilko sienet. Paista oliiviöljyssä, kunnes ne saavat hieman väriä ja mausta suolalla ja pippurilla. 
  3. Laita lohi nahkapuoli alaspäin uunivuokaan. Sekoita sienet ja smetana ja kaada lohen päälle.
  4. Paista lohi kypsäksi, noin 30 min.
  5. Lohen kypsyessä pese kaalit ja pilko parsakaali kukinnoiksi. Keitä n.5min.
  6. Tarjoa ja nauti 🙂
